Brassaii Introduces New Chef

TORONTO — Two months after hiring a new executive chef, Toronto’s Brassaii restaurant hosted a dinner to introduce the well-travelled toque to Toronto’s media and unveil his new summer menu.

 

Chef Marcus Monteiro, who has travelled to more than 100 cities and worked at multiple Michelin Star restaurants worldwide, combines science and passion to create his vision of “New-Age Mediterranean” cuisine.

Using local, seasonal ingredients, Monteiro highlights the rustic kitchens of southern Italy and the exotic coastlines of Spain and North Africa, taking the spices and inspirations of the Mediterranean and melding them to create something new.

Guests can expect to see an array of vegetarian dishes, including Raw Salad tangled with fresh fruit, seasonal vegetables and homemade “Monteiro” cheese; Roulette with fried angello peppers, olive oil, fleur de sel; and the Pickled Salad that includes black almond soil and an assortment of pickled vegetables and onion caramel.

For those who prefer meat, Monteiro features Crispy Ribs rubbed in a Moroccan glaze and served with mint chutney; Duck 2 Ways served with seasonal asparagus; and Foie with candied red wine, toasted brioche and a carrot marmalade.
