Canadian Chefs Compete in Healthy Heart Challenge

TORONTO — The Cardiovascular Health Foundation of Canada hosted the first-ever Healthy Heart Challenge last night at the BMO Financial Group Institute for Learning in Toronto to promote heart-healthy cooking.

Chefs from Canadian retirement homes, DelManor, Revera, and V!VA prepared a full-course meal and let the audience choose the winner. The team from Toronto-based DelManor served up the winning menu, which featured Pommery mustard-crusted Atlantic salmon with quinoa and zucchini rösti, served with asparagus and carrots, sweet potato purée and red pepper coulis and garnished with kale chips.

“We needed to showcase what retirement [living] is all about,” said Divakar Raju, DelManor’s corporate manager of Culinary Services.

The event, which featured guest speaker Tukwini Mandela from House of Mandela Wines, kicks-off the organizations Walk of Life campaign taking place in over 25 cardiac rehab centres across Canada.
