Chocolate Masters Canuck Selection Approaches

TORONTO — The drive to collect applications for the Canadian National selection for the 2013 World Chocolate Masters is underway.

The contest, which will be held at Toronto’s Humber College, from Jan. 19 to 20, is open to chocolate professionals who will be asked to appeal to the theme, which will be ‘art of chocolate’ and the ‘architecture of taste.’

Winners of each national selection will represent their home country at the international final in Paris in October 2013.

The competition requires each contestant to create one chocolate showpiece, a moulded praline, one pastry and one chocolate dessert. And, new this year, competitors must reinvent a local classic recipe. Accomplished foodservice professionals from the pastry and chocolate industry will judge this year’s entries.

Interested chefs can apply online at chocolatemasters.com. The deadline for submissions is Aug. 24.
