Dale Nichols Named Chef at Algonquin Resort

ST. ANDREWS BY-THE-SEA, N.B. — The 125-year-old Algonquin Resort will be home to new culinary zest, with the appointment of maritime chef Dale Nichols as executive chef.

The Moncton native has worked in several kitchens in Toronto and has helmed the Delta Hotel Halifax and Keltic Lodge Resort and Spa in Ingonish, N.S. He was most recently the executive chef at the Digby Pines Resort and Spa in Nova Scotia. “Dale is an extremely talented chef and a dedicated culinary educator who is perfectly suited to elevate the Algonquin’s food-and-beverage offering through equal parts creativity and talent development,” said Gerry Chase, president and COO of the Shelton, Conn.-based New Castle Hotels & Resorts, which manages the property in St. Andrews by-the-Sea.

“No resort is more relevant to the Maritimes than the Algonquin, and I’m looking forward to developing a team of local culinary talent to showcase the tremendous abundance of our region.
