Oliver & Bonacini’s Montreal project opened at hotel Le Mount Stephen this spring. Located in the heart of downtown Montreal, Bar George honours the rich history of the building that houses it. Chef Anthony Walsh worked closely with chef de cuisine Kevin Ramasawmy (formerly of Maison Boulud and Daniel) to develop playful takes on traditional fare from the British Isles, peppered with Québécois humour. Serving breakfast, lunch, dinner, late night bites and weekend brunch, Bar George’s menus feature items such as Scotch Eggs with St-Canut porcelet and turnip rémoulade ($9); Smoked Fish & Crumpet with Earl-Grey salmon, kipper butter and rollmops ($16); and Veal Cheek and Kidney Pie with stout, wild mushrooms, sweet peas and kohlrabi ($35). The beverage program focuses on classic English cocktails, a curated selection of beers and ciders, as well as whiskies, gins, Sherries and ports. The bar team includes notable Montreal mixologists Maxime Boivin and Drahos Chytry, who shake up cocktails such as the Golden Square Mile Sour with gin, St-Germain elderflower, liqueur, cider, lemon and egg ($13); and the Boulevardier du Baron with Canadian whisky, Campari, Vermouth Rouge and maraschino liqueur ($14).
