Three-Ring Binder 
Recipe by Shane Kennedy, corporate chef, The Works Gourmet Burger Bistro, Oakville, Ont.

Ingredients:

8 oz ground beef (medium or lean)
to taste butter
to taste button mushrooms (sliced)
to taste salt and pepper
to taste spicy pepper (your favourite)
to taste mayonnaise
1 slice gouda cheese
3 onion rings
1 bun

Method:

1. Form burger patty and cook on a pre-heated barbecue for approximately four minutes per side. Turn the patty after two minutes on each side. Cook until the meat reaches an internal temperature of 160°F (71°C)
2. While your burger is cooking, heat butter in a pan until bubbling and add mushrooms. Stir frequently for three to four minutes and season with salt and pepper. Remove once cooked
3. Chop spicy pepper and mix with mayonnaise
4. When the burger is nearly done, put the gouda on top
5. Cook the onion rings
6. Top patty with mushrooms, spicy mayo, three onion rings and bun

Yield: serves one
