VANCOUVER — Vancouverites are lining up to experience Gastown’s newest Asian-inspired sandwich shop, Bao Down, which offers Taiwanese, Vietnamese and Korean-inspired steamed bao-bun sandwiches.
Matt Adolfo, Bez Soltani and chef Greg Edwards have teamed to open the licensed 25-seat eatery at 12 Powell St., offering steamed-bao specialties such as the Jaws bao, with coconut-crusted Vietnamese catfish, kimchi tartar sauce, micro greens and cabbage in a Thai vinaigrette ($5), or the Ninja roll, made with micro greens, rice noodles, black kale and sprouts, which can be dipped in coconut peanut sauce, spicy peanut sauce or chili citrus vinaigrette ($5).
Street-inspired sandwiches are also on offer, which range from fried chicken to grilled cheese and kimchi. Sides include housemade double-fried Kennebec potato fries, pork belly sisig, chicharon, sweet soy, crispy garlic, bean sprouts, garlic scape mayo and scallions ($5).
