Ingredients
Fresh arugula
Fresh mint
Roasted beets/candy cane beets/golden beets
Pistachios
Maple-dijon vinaigrette
Dijon mustard
maple syrup
salt
garlic
balsamic (emulsified with sunflower oil)
Directions
- Roughly chop beets
- Whisk together dressing ingredients.
- Toss together arugula and mint and top with roughly chopped beets and pistachios
- Drizzle with dressing
