Beet Salad

Ingredients
Fresh arugula
Fresh mint
Roasted beets/candy cane beets/golden beets
Pistachios

Maple-dijon vinaigrette
Dijon mustard
maple syrup
salt
garlic
balsamic (emulsified with sunflower oil)

Directions 

  1. Roughly chop beets
  2. Whisk together dressing ingredients.
  3. Toss together arugula and mint and top with roughly chopped beets and pistachios
  4. Drizzle with dressing
