Calgary Herald: Banff Springs Executive Chef Retires

BANFF, Alta. — After 40 years as Fairmont Banff Spring’s executive chef, Martin Luthi is hanging up his toque, reports the Calgary Herald.

A Switzerland native, Luthi worked in hotels and cruise ships in Europe before moving to Canada.

With a goal to learn English, he took a job at the Fairmont Banff Springs, and stayed on for four years, before becoming the executive chef at Fairmont’s Chateau Lake Louise. He returned to Banff Springs in 1980 and has helmed the kitchen — which has grown to 135 chefs — ever since.

“It was exciting to be part of this. There was never a dull moment,” Luthi told the Herald, while adding that he plans to travel in his retirement and return to the hotel as a guest. [thecalgaryherald.com]
