VANCOUVER — Campagnolo Roma, a Vancouver-based Italian-style eatery inspired by Roman cuisine, is celebrating offal with a special dinner Nov. 9.
Prepared by chef Ted Anderson, the dinner will feature a menu dedicated to offal, the “fifth quarter” of an animal that Roman butchers traditionally kept for themselves.
The family style dinner will be served at communal tables and will offer items such as rigatoni co’ la pajata (calve’s intestines, fried eggplant), zucca gratinato con cervello di porco (fall squash, pig’s brain, taleggio) and sanguinaccio (blood pudding, orange biscuits).
