MIAMI – The Miami Airport Marriott is spicing things up with the new Cane Fire Grille, a South-Florida inspired restaurant with an internationally flavoured menu.

Chef Joe Natoli runs Cane Fire’s kitchen, offering dishes such as sugar cane-speared ahi tuna with Bacardi coco rum and pepper glaze; and sea-salt crusted NY strip chimichurri with citrus and black pepper yuca planks. Both South American and Cuban cuisines are cited as influences on the menu, with ingredients like black beans, chorizo, serrano ham and dulce de leche appearing in Natoli’s dishes.

The restaurant is part of a new hotel concept by Marriott, which brings business and leisure travellers together through three linked properties: Miami Airport Marriott, the Courtyard by Marriott and a Residence Inn.
