Chef Alex Chen Teams Up With Chop Steakhouse & Bar

CALGARY — Chef Alex Chen and Chop Steakhouse & Bar are teaming up to bring a limited-time menu across Canada as a part of the Steak Masters – In Pursuit of Perfection tour. 

The tour and accompanying menu will debut February 27 at Chop Steakhouse & Bar in Richmond, B.C. and travel across Canada throughout 2020.

Stephen Clark is the executive chef at Chop Steakhouse and a long-time friend of Chen. 

“Most restaurants are focused on tradition when it comes to preparing steak, but at Chop, our pursuit is achieving steak perfection,” says Clark. “I jumped at the opportunity to collaborate with my mentor and good friend, chef Alex Chen, who agreed to come to my kitchen at Chop to create a handful of new and unexpected menu items for Canadian steak lovers to enjoy.”

Chen and Clark teamed up to create an exclusive menu featuring four dishes — steak tartare, tomahawk au poivre, sirloin cap picanhawith chimichurri and Brazilian spices as well as a pineapple upside-down cake for dessert. 

“Chef Stephen and I enjoy working together because we share a similar philosophy in the kitchen focused on prioritizing flavour above everything else,” says Chen. “What I love about the dishes we’ve created is they strike the perfect balance between challenging the status quo of steak preparation, while also being well-balanced, elegant and familiar.”

The Steak Masters Tour kicks off in Richmond and travels east, making stops in Edmonton, Calgary, Winnipeg and the Greater Toronto Area throughout the year.
