Chef Alexandra Feswick Takes Home Top Prize at the Grate Canadian Cheese Cook-Off

TORONTO — Alexandra Feswick, chef de cuisine at the Drake Hotel in Toronto, is the new Dairy Farmers of Canada’s (DFC) Grate Canadian Cheese Cook-Off champion.

The biannual showdown took place last week at DFC’s Canadian Cheese Counter at the Toronto Food & Drink Market. Four top chefs from across Canada took to the stage to create the ultimate mac and cheese using Canadian cheese.

“The competition was stiff, each chef brought something different and unique to the table,” says Feswick, whose Homestyle Nutty Mac and Cheese won the day. “Mac and cheese is such a comforting dish and I wanted to stay true to that ideal while elevating it with new exciting ingredients like we do at The Drake.”

The winning dish combined cheddar, sage and mushrooms paired with hazelnuts, blue cheese and Jerusalem artichokes.

Other competitors included Andrew Farrell, chef de cuisine at 2 Doors Down Food + Wine in Halifax; Nicole Gomes, executive chef at Nicole Gourmet in Calgary; and Thompson Tran, chef and owner at The Wooden Boat, Port Moody, B.C.
