CHARLOTTETOWN — Holland College honoured chef Cory LeDrew as one of three distinguished alumni last week.
LeDrew is a 2001 graduate of the Culinary Institute of Canada in Charlottetown. After graduation, LeDrew got his first job at the Fairmont Jasper Park Lodge in Jasper, Alta. He then moved to the five-diamond Banffshire Club restaurant in the Fairmont Banff Springs hotel, where he eventually became the executive chef. “That was probably one of the highlights of my career,” LeDrew told Mainstreet P.E.I. host Karen Mair. “We had a lot of wait staff, money was no object. Those days don’t really exist in a lot of restaurants anymore.”
