CALGARY— Chef Darren MacLean, founder of three of Canada’s Top 100 Best Restaurants —Shoukunin, EIGHT and NUPO — is opening a speakeasy concept bar, afterEIGHT, on January 30.

As the name implies, afterEIGHT will only be open for the public once the guests of EIGHT have departed for the evening. A waitlist will begin at 10 p.m., but walk-ins will be accepted should the room be available by calling the afterEIGHT parlour through the phone in the lobby of the ALT HOTEL east village. The speakeasy offers an intimate eight-seat parlour.

Interiors are opulent and intimate, with guests entering through a hidden door off the hotel lobby. Once ushered to their reserved seat, one of MacLean’s master mixologists will welcome guests.

The cocktail menu at afterEIGHT takes inspiration from “Satoyama,” meaning the stretch of land between the mountains and the sea, and is a collaboration between MacLean and Yoshinobu Kimura, formerly of Tokyo’s World 50 Best Restaurant Narisawa before moving to open his own SUSHI-M.

Specialist spirit highlights include Dalmore Constellation (afterEIGHT will be home to the only bottle available in Canada) and Flor de Cana, 30-year-old rum, alongside local favourites such as Burwood Distilleries Single Malt and Bridgeland Distilleries Taber corn Berbon. The premium range of spirits is $15 to $2000 per ounce.
