Chef Steven Lee to Head Lima 2019 Pan American Games’ Culinary Team

BURLINGTON, Ont. — Sodexo Canada’s executive chef Steven Lee will be leading a team of more than 300 Sodexo professionals in the kitchens at the Pan American and Parapan American Games in Lima, Peru this year.

From July 26 to August 11 and from August 23 to September 1, the team expects to serve approximately 700,000 meals to more than 12,000 athletes, officials, volunteers and employees at the games.

“I have the challenge to bring together an international team that will support elite athletes from all over the Americas,” says Lee. “In a temporary structure, our culinary team will produce up to 24,000 meals a day with 24/7 service.”

The Pan American games are familiar territory to Lee, who previously led the culinary teams for the 2015 Toronto Pan American and the Vancouver 2010 Olympic games.

Lee will highlight Peruvian flavours on his menu by focusing on fresh and local ingredients. There will be three hot-food stations offered, including Italian, featuring pizza and pasta dishes; a grill station focusing on proteins and vegetarian options; and a Peruvian station, which will feature dishes such as papa rellena (stuffed potato) and lomosaltado (sautéed beef).

There will also be a 22-hour snack station, called the Inca Bio Station, which will serve fruits, veggies, sandwiches, yogurt, cereals, breads and other cold foods for more convenience.

“We’ll make sure there’s a large variety of a fresh, nutritious food for all dietary needs to fuel the athletes before their events,” says Lee.

A team of experts in food, nutrition and logistics will be working with Lee to ensure the highest standards of quality, safety and waste management for the games.
