TORONTO — The King Street Food Company, owner of the Buca restaurants, Jamie’s Italian, Jacob’s & Co. Steakhouse and The Saint Tavern, has announced its latest addition. La Banane — a French restaurant led by executive chef Brandon Olsen of Chocolates X Brandon — will open in the space previously occupied by The Saint Tavern as the latter gets relocated to a new spot, yet to be announced.
In an interview with The Globe and Mail, the company’s managing partner, Peter Tsebelis says the new restaurant is “really Brandon’s baby. I’m not sure if it was us choosing him, or him choosing us. [We have] a common ethos to food and hospitality.”
Olsen has already accumulated significant experience in French cooking, having previously worked at The French Laundry and Ad Hoc, both located in California’s Napa Valley.
“In French the saying ‘avoir la banane’ means you have a big smile and that you’re happy. I want to make people happy through my food,” says Olsen.
