OTTAWA — Le Germain Hotel Ottawa, set to open in May, will feature a new all-day, on-site restaurant highlighting Canadian products.
Norca Restaurant & Bar will showcase market cuisine in a chic-yet-warm setting. Chef Dominique Dufour and her team pay tribute to Canadian ingredients by sourcing fruits, vegetables and proteins exclusively from Canada. Menu items will be largely influenced by Quebec and Ontario, and combined with international flavour.
Menu offerings include a smoked-lamb-shoulder sandwich with caraway brioche and dill cucumber ($17); toast points with caramelized leeks, mushrooms, burnt goat cheese and ramps ($14); mulard duck with caramelized squash, foie gras sour cream, northern gremolata and consommé ($33); and upside-down gooseberry cake with wild honey, sea salt, hay ice cream and burnt sugar ($12). Norca will also feature a selection of classic cocktails, natural wine and local beer.
Dufour’s culinary career has seen her travel across the country and beyond. She is the co-creator of Les Femmes Chefs de Montréal and was previously chef at Le Pier 66 in Montreal.
