ST. ANDREWS BY-THE-SEA, N.B. – The folks at Fairmont Algonquin hotel will be hosting a celebration of True North Salmon’s Seafood Trust Eco-Label certification Sept. 23 at noon. Under the tutelage of executive chef Ryan Dunne, the event will showcase True North Salmon, a division of Cooke Aquaculture — which is based in Charlotte County — and highlight eco-salmon to its partners, customers and supporters who have contributed to its success.
To coincide with the celebration, chef Dunne will re-launch the menus at the Fairmont Algonquin to include Seafood Trust-certified Atlantic salmon. Dunne will prepare a gourmet lunch to highlight fresh, from the Bay of Fundy, Eco-Label Salmon.
Seafood Trust-certification identifies True North Salmon’s premium products as being raised in an environmentally responsible manner that demonstrates a commitment to sustainable development, low impact farming and conservation.
Cooke Aquaculture CEO, Glenn Cooke, will be on hand to discuss the Seafood Trust certification.
