Fairmont Palliser’s Hawthorn Dining Room Debuts New Culinary Team and Menus

CALGARY — Fairmont Palliser’s Hawthorn Dining Room & Bar has announced a new culinary team and re-freshed menus. New executive chef Gregor Dunki and Hawthorn chef Daniel Mracka bring more than 30 years of hospitality experience from North America to Europe and developed menus based on the province’s abundance of local products and renowned beef. The refreshed menus will be available until the end of August.

The dinner menu features several beef options — including tenderloin, various steak cuts and tartare — as well as bison. The chefs have also included several vegetable-based main dishes to satisfy dietary preferences.

Additionally, the chefs have updated the Hawthorn bar menu with smaller sharing plates and lighter fare. Throughout the year, chefs will be offering speciality pairing dinners that highlight various wines and spirits or unique dishes that can’t be found on the menu.

“The new Hawthorn dinner menu is like a love letter to our province,” says Dunki. “As both chef Mracka and I are relatively new to Alberta, we wanted our first menu at Hawthorn to be a representation of what travellers rave about when they indulge in the cuisine when they visit Alberta.”
