Fairmont Removes Shark Fin From Menus

TORONTO — At a time when shark-fin bans are becoming commonplace across North America, Fairmont Hotels & Resorts has removed the delicacy from its hotel menus in Asia.

“Our hotels are constantly seeking ways to be more ethical in their menu choices and have removed other at-risk species under the guidance of reputable seafood-watch organizations. Simply put, it’s the right thing to do,” said Jean Michel Offe, vice-president, Food and Beverage, Fairmont.

As part of the company’s Sustainable Seafood initiative, launched in 2009, the Fairmont Singapore, Fairmont Beijing, Fairmont Yangcheng Lake and Fairmont Peace Hotel in Shanghai will no longer offer shark fin on its hotel menus. Instead, the company will highlight alternative options, such as mud crab, oysters and green-lipped mussels.
