TORONTO — Folly Brewpub in Toronto has hired Anthony Santi as its new chef. This announcement coincides with the young establishment’s first anniversary, which it celebrated yesterday.
Santi boasts a wealth of experience, having worked in top restaurants such as Toqué (Montreal), Bestellen (Toronto), La Quercia (Vancouver) and The Roving Marrow (Melbourne).
With the addition of Santi to the Folly team, the brewpub is reaffirming its equal commitment to food and beer. Chef Santi’s new menu features dishes that are ideal for sharing — and pairing with Folly’s beer selection — including pan-seared mackerel with girbivhe, shaved fennel and orange ($9); glazed beef cheek with rutabaga, roasted peppers, charred green onion and parsnip chips ($18); and a twice-baked eggplant with chorizo ($9).
