Forage To Open In Vancouver

VANCOUVER — Vancouver welcomes a new restaurant Nov. 20, as “Forage” opens its doors at 1300 Robson Street.

Chef Chris Whittaker says the new restaurant represents everything he’s passionate about: “respect for our food sources, using what we need without excess waste and bringing a community together around good food.”

The new menu includes a variety of charcuterie boards and snacks such as “crackling and popcorn,” created using ingredients from local and organic farmers, fishers and producers.

The restaurant was conceived and created as part of the “Next Course” project, a joint-effort between management, Listel Canada, B.C. Hydro, LiveSmart B.C., and the Green Table Network to create a restaurant centred around energy efficiencies and low-impact technologies.

The resto, located inside the Listel Hotel, replaces O’Doul’s, a Vancouver landmark for 40 years.
