CHICAGO — Technomic, a Chicago-based research firm, has identified six Canadian foodservice trends for 2012.
The six trends include a return to the classic comfort foods, such as burgers and pizzas with unexpected toppings; the use of fewer ingredients and execution of simple preparation techniques; the updating of kid’s menus with healthier options; the disclosure of food sources and nutrition facts; the use of more technology, such as mobile payment and location-based platforms as well as an influx of new concept models, ranging from food trucks and high-tech urban prototypes to fast-casual and scaled-down offshoots of full-service eateries.
