GUELPH, Ont. – While the lowly root vegetable may have an image problem to contend with, the culinary team at Artisanale Café in Guelph is looking to change that perception. On October 25 Artisanale is letting guests judge the versatility and flavours of root vegetables first-hand, by showcasing this year’s bounty with select wines. On the menu, priced at $65 per person, is leek and gruyere; celeriac galette stuffed with chicken liver and remoulade; salsify and caramelized onions with fish; parsnip and carrots with meat stew; and candied beet fruit salad with panna cotta.
