TORONTO — Gusto 54 Restaurant Group has joined Vancouver Aquarium’s Ocean Wise sustainable seafood program.

In serving Ocean Wise seafood, we are committing to fostering an industry in which diners can make more educated decisions so that we can work together towards creating a more sustainable and enduring food system.”
Ocean Wise-certified offerings include Trattoria Nervosa’s crispy-skinned arctic char served with Italian black rice, artichoke pureé, sautéed kale and salsa verde ($25); and Gusto 101’s steel-head trout with chickpeas, kale, swiss chard, acqua pazza ($23.99).
Gusto 54 is a Toronto-based company that operates a portfolio of restaurants in Toronto and L.A., as well as a commissary and catering division.
