Stanton will blend pre-prohibition classics with innovative original creations, emphasizing the craft experience. “I look forward to the synergy between the kitchen and the bar as we evolve our respective menus and push the boundaries of food and drink,” said Stanton. “Beyond complimentary flavour profiles, you can play with textures, temperatures and aromatics to make drinks play off of dishes, which enhances the dining experience for the guest. There will always be a few cocktails on our menu that are best sipped without food.”
Stanton, the co-founder and vice-president of the Canadian Professional Bartenders Association, previously worked at Vancouver’s Blue Water Café + Raw Bar as well as KoKo Restaurant + Bar at Opus Hotel Montreal.
Hawksworth Restaurant is located inside the Rosewood Hotel Georgia Vancouver, which also opens this summer.
