TORONTO — ‘Tis the season for top 10 lists for everything from movies to wine and, well, meat.

The National Post has released its list of meat trends for 2011, and perhaps unsurprisingly, the theme of regionality and sustainability is prominent. With “the rise of the boutique producer,” and “drug-free beef and fast food,” making the grade, restaurateurs would be wise to take a look at both the expected trends, as well as their own menu offerings.
