Hot Rocks Oven Technology Helps Overcome Labour Shortages

DRUMMONDVILLE, Que. —In the restaurant industry, recruiting new cooks is a difficult task — it’s a buyer’s market for back-of-house employees. The Hot Rocks oven was developed with a focus on addressing these labour shortages.

Picard Ovens, in business for more than 60 years, has developed a new type of oven — a stone conveyor called Hot Rocks. The ovens features a granite cooking surface, which gives the pizza an authentic stone-cooked taste.

In 2018, Hot Rocks ovens recorded 365-per-cent growth, attracting leading pizza chains such as Mellow Mushroom and Home Run Inn.

This new technology focuses on solving labour shortages and increasing revenue. While conveyor ovens move pizza fast — allowing for high volumes — and are easy to operate, requiring less skilled labour, workers who were designated to keep track of baking and spinning pizzas can now be assigned to making pizzas to increase output.
