TORONTO — INK Entertainment is opening two new restaurant concepts at Celino South Beach hotel in Miami Beach, Fla. The property’s in-room dining, poolside-dining services and hotel bars, will also be managed and operated by the Toronto-based company.
Helmed by Patrick Ochs, corporate executive chef for INK Entertainment USA, the two concepts — Pubblica Italiana and Dalia — will launch in April alongside the hotel’s unveiling.

Pubblica Italiana will combine Italian-inspired cuisine and locally sourced, high-quality ingredients. The menu will highlight handmade artisanal breads and pastas alongside an extensive wine list featuring selections from around the world.
Dalia and its menu will bring some of the Mediterranean’s most celebrated delicacies to South Beach. Described as simple and elegant, Dalia will apply a modern approach to classic dishes; with chefs visible in the kitchen, alongside an illuminated display of fresh oysters and an authentic wood-fired oven. The extensive drink menu will feature cocktails, as well as carefully curated list of international wines to compliment the seafood-centric fare.
