Knorr: Asparagus and Morel Mushroom with Chicken Soup

Ingredients

6 oz  Onion, yellow, diced small
1.5 oz  Morel mushrooms, dried (or 4 oz. fresh, sliced)
4 oz  Red bell pepper, small dice
2 qt Knorr® Professional Liquid Concentrated Chicken Base 4 X 946ml
1 ea Rotisserie chicken, meat pulled
10 oz Asparagus, fresh, cut 1/2″ on bias
0.5 oz Chives, fresh, cut fine

Preparation
1. If using dried morels, soak in warm water until soft. Then drain and slice.
2. Sweat onions in a small amount of oil until translucent.
3. Add red pepper and mushrooms and sauté for 3 minutes.
4. Add Knorr® Liquid Concentrated Chicken Base and rotisserie chicken meat.
5. Bring to a simmer. Simmer for 10 minutes.
6. Add asparagus and simmer until tender.

To Serve: Add chives and serve.

Yield: 3 qts.
