Laurent Godbout to Represent Canada at Bocuse d’Or

MONTREAL — Chef Laurent Godbout and assistant Adam Martin will be representing Canada on the world stage during the Bocuse d’Or competition, to be held in Lyon, France Jan. 27 and 28, 2015.

After practising for more than 110 hours a week and working full-time, the chef and owner of Montreal’s Chez l’Épicier Restaurant emerged as the winner during the Canadian Finals Nov. 16 and 17 in Longueuil, Que.

As part of his presentation, Godbout showcased pumpernickel bread canapés sprouting out of a ceramic tree trunk design.

Godbout and Martin will join 23 other chefs from across the globe in Lyon, where the winner of the culinary competition will be selected from a panel of judges.
