Little Grouse on the Prairie to Open in Saskatoon

SASKATOON — The team from Ayden Kitchen & Bar is opening another restaurant in Saskatoon.

Little Grouse on the Prairie, located in the historic Birks building, opens its doors on Feb. 26. Named for Saskatchewan’s provincial bird, Little Grouse is a 40-seat Italian restaurant designed by Connie Young of Cece Designs in Calgary, the same designer responsible for Ayden Kitchen & Bar. Using sample palettes of floral wallpaper, antique artifacts, vintage frames and old hutches, Young has created a space that evokes the feelings of family, comfort and the rural community.

The kitchen is led by Jesse Zuber, who moves over from his position as head chef of Ayden. His menu will feature authentic Italian food based on Prairie ingredients such as handmade egg yolk ravioli finished in a porcini stock; tagliatelle with garlic and Saskatchewan chanterelle mushrooms finished with a touch of stock and cream; and seven-year aged Acquerello Risotto with black truffle.

Little Grouse will also boast Saskatoon’s first open-kitchen eating bar, allowing guests to directly interact with Zuber and his team while they work.

The beverage program has been meticulously conceived by Erick Strong, GM and sommelier, to present a comprehensive and exclusively Italian wine list and a cocktail list comprised entirely of barrel-aged cocktails.
