TORONTO — The owners of the tapas bar, Carmen have opened a new Spanish-style market, Mercat del Carmen in Toronto.

“Mercat will be the pantry and the fridge of Carmen. We want people to know that the products they take home from us are made to the highest standards, well prepared and designed to meet their needs,” says chef Luis Valenzuela Robles Linares.

Mercat del Carmen will offer specialty pantry items including Spanish canned goods and in-house preserves, as well as house-made root chips and tomato sauce. Grab-and-go items will include chef Valenzuela’s Patties Rillettes, smoked meats, unique cheeses, and Jamon Pata Negra, a black pig fed with acorns and hazelnuts. Patrons can create their own sandwiches, featuring St. John’s Bakery bread topped with Serrano ham or salmon and salads prepared fresh every day.

In the spring, Mercat del Carmen will offer an evening menu featuring bacon-wrapped dates, ceviches, patatas bravas, mussels, wine, sherries and beer.
