Metropolitan’s Habitat Restaurant Set to Debut

CANMORE, Alta. — This weekend, Friday, June 18, marks the launch of Metropolitan Hotels’s Habitat Restaurant & Bar at the Grande Rockies Resort in Canmore, Alta.

The design of the new space, from the lauded Senses restaurant brand, will focus on natural tones inspired by the Canadian Rockies. “I have used finishes and millwork that will complement the mountains in full view for our guests,” Paul Waddell, the interior designer, explains. “Essentially the goal was to create a natural, understated setting that allows chef Leung’s strong flavours and bold cuisine to take centre stage.”

Speaking of the head chef, Vincent Leung — who began his career at Hemispheres Restaurant and Bistro at the Metropolitan Hotel Toronto — will feature a menu inspired by China, Indonesia, Japan, Thailand and Vietnam while focusing on fresh, local products with dishes like beef tenderloin and sablefish with a herb mustard crust, along with wasabi mashed potatoes for sharing.

“The culinary scene in Canmore is the best in the Rockies, so we knew a special restaurant and menu would be needed to stand out,” Henry Wu, president of Metropolitan Hotels says of the new place. “Chef Leung and Paul Waddell have done an incredible job creating a dining experience at The Grande Rockies Resort that is beyond compare.”
