Model Milk Chef Wins Hawksworth Young Chef Scholarship

VANCOUVER — Ian MacDougall, chef de partie at Model Milk restaurant in Calgary was named the winner of the Hawksworth Young Chef Scholarship Foundation award, a national competition designed to help young chefs start their careers.

The 23-year-old won over judges with his dish of roasted squab with lobster agnolotti, nasturtium-braised endive and squab jus. He took home the grand prize of $10,000 and an opportunity to stage in an international restaurant. Second place winner, Cynthia Iaboni of Le Serpent restaurant in Montreal was named Le Creuset’s Rising Star and took home $5,000.

Chef David Hawksworth and his chef de cuisine Kristian Eligh, from Vancouver’s Hawksworth Restaurant and Bel Cafe, held competitions in Toronto, Calgary, Vancouver and Montreal. The final judges in the competition included Mark McEwan of the McEwan Group in Toronto, Normand Laprise of Toqué! and Brasserie T in Montreal, Scott Jaeger of the Pear Tree in Burnaby, B.C. and Anthony Walsh, executive chef of Oliver & Bonacini Restaurants in Toronto.
