VANCOUVER — Montreal chef Mathieu Cloutier is this year’s winner of the Gold Medal Plates national competition.
The French chef, who along with partner Jean-Philippe Saint-Denis, runs a small resto in Montreal called Kitchen Galerie, competed in Vancouver this past weekend, beating six contenders from across Canada.
Cloutier’s winning creation featured a “brussel sprout” that was created by wrapping spinach leaves around a meatball of ground rabbit and foie gras. The main element was a rack of rabbit confit with a foie gras parfait, Chioggia beet chutney and a toasty slice of deep-fried bread.
David Lee of Toronto’s Nota Bene took second place while Ottawa chef Matthew Carmichael, of Restaurant E18hteen, placed third.
