Ottawa Chef to Helm Noma

COPENHAGEN — A new chef will take the reins at Noma restaurant next month. Ben Ing, a 30-year-old Ottawa native will become the new head chef at the two-Michelin-star restaurant in Copenhagen, considered one of the best in the world.

Ing started at Noma as a line cook in 2014. He will be taking over during a transitional time for the restaurant as Noma closes its doors to focus on opening a new space in 2017. “There is a whole team dedicated to the new Noma, just a five-minute bike ride down the road near Christianshavn,” Ing says. “It is a huge building that has been abandoned, with incredible graffiti. We’re creating a whole new urban restaurant — farming, greenhouse, waterbeds — everything we have here, but all grown-up, evolved.”

Meanwhile, Noma opens its third international location in Sydney, Australia in January.
