HALIFAX — From pop-up to permanent, chef Colin Bebbington has opened Tribute, a unique restaurant that honours the heritage cooks and techniques that have shaped his culinary journey.
The new restaurant, located in Southwest Properties’ new Cunard Building on the Halifax Waterfront, is designed by MacKay-Lyons Sweetapple Architects and being built by local contractors Kimber Construction with a focus on using locally sourced materials.
Everything is custom-made to support the restaurant concept, which evolved from Bebbington’s Scotian Heritage pop-up dinners and represents a personal dedication and thank you to his acclaimed mentors around the world.
Rather than being defined by a specific cuisine, Tribute will be defined by a place — Nova Scotia — using locally sourced ingredients to pay homage to authentic, impactful dishes with international influences showcased through live fire and charcoal cookery.
A special focus of Tribute’s menu will be the hand-rolled pasta, crafted with skills he learned during three months in Bologna, Italy, where he trained in traditional sfoglia techniques under the founders of the VSB Bologna school.
The open-plan kitchen-to-dining room removes the walls between front and back of house, allowing guests to experience the beauty of cooking with all senses, better connecting with the food on the plate and bringing a true ‘kitchen party’ atmosphere to the intimate 45-seat dining room.
