Now Open: Valerie

TORONTO — Valerie is now open atop Hotel X Toronto, created by Toronto entrepreneurs and hospitality innovators Brandon Marek and Michael Kimel of Harlo Entertainment, Matthew Tsoumaris and Brandon Farmer of Honeycomb Hospitality and chef Adrian Niman.

Valerie occupies the entire rooftop as well as the 27th and 28th floors of Hotel X Toronto, each offering something different. The menu, helmed by executive chef Adrian Niman, head chef Andrew Ttooulias and project chef Cory Kurtzman of Nobu Miami, features Japanese-inspired plates and light bites, new-style sashimi, rolls and nigari from the 28th floor sushi bar. The restaurant’s beverage program is led by beverage manager Ben Kingstone, offering a series of cocktails that shares a piece of Valerie’s story.

“We’ve re-defined and set a new standard for unique dining and hospitality by personifying the experience,” says Tsoumaris. “At Valerie, guests will find themselves embodying Valerie’s dynamic and captivating character as reflected in the food, drinks and atmosphere. Valerie is no one and everyone all at once, and this experience allows guests to embody her personality as they escape to her favourite spot.”
