O&B and Ink Renew Trump Restaurants

TORONTO — The Trump International Hotel & Tower Toronto is receiving a culinary overhaul, thanks to a partnership between Ink Entertainment and Oliver & Bonacini Restaurants, which is getting ready to unveil two social spots — America and The Calvin bar — this fall.

The partners have put their own spin on the former Stock Restaurant Bar & Lounge and Suits Lobby Lounge. “Trump Toronto features an unmatched level of luxury and hospitality,” said Charles Khabouth, founder and CEO, Ink Entertainment. “America and The Calvin bar are testaments to the sophistication and buttoned-down business chic that the hotel currently offers.”

A newly constructed Bay Street entrance will lead to the 2,000-sq.-ft. Calvin bar, which offers signature cocktails, classic drinks inside an extended wrap-around lounge.

The hotel’s supper club concept, America, will be helmed by O&B chef Anthony Walsh, along with Bill Osborne, chef de cuisine, and Markus Bestig, executive chef, of Trump International Hotel & Tower Toronto. The 110-seat resto, designed by Toronto’s II by IV Design, will offer late-night cocktails, classic small plates and live music.

“Elevated, lavish takes on classic regional American fare is what America is about,” said Michael Bonacini, co-founder and partner, O&B . “Chef Anthony Walsh is rogue and unapologetic in his cooking — and we’re excited about presenting American fare that truly represents the confidence and boldness of its namesake, but in a lux and indulgent way.”
