VICTORIA, B.C. — Brock Bowes has been pegged as the new executive chef of the Oak Bay Beach Hotel, set to reopen in Victoria, B.C., in the fall.
“When the position of executive chef at the Oak Bay Beach Hotel was announced, I was drawn to the opportunity to lead the culinary team within a hotel that has such a rich history,” said Bowes.
“The overarching vision, based on lasting partnerships and absolute quality, aligns so well with my philosophy of fostering relationships with local suppliers and working to source the finest local products for my menus.”
The Vancouver Island University Culinary Arts grad has worked at The Fairmont Chateau Whistler and The Sonora Room Restaurant at the Burrowing Owl Estate Winery in Oliver, B.C., among other locales. Most recently, he worked as the restaurant chef at the Pacific Restaurant and The Mark dining room at the Hotel Grand Pacific in Victoria, B.C.
The 80-year-old Oak Bay Beach Hotel is being rebuilt as a 100-room hotel with 20 luxury residences; it’s slated to open in October.
