EDMONTON — Paul Shufelt, executive chef for 10 years at Century Hospitality Group, is leaving to open his own restaurant in Edmonton.
“My time with Century will come to an end at the end of July and my focus will shift to opening my new place, The Workshop Eatery, in the fall. My new venture will be small and fairly simple, focusing on handcrafted, local, and seasonally inspired cuisine and genuine hospitality,” Shufelt stated in an open letter to the Edmonton Sun.
The Workshop Eatery will focus on fresh produce and will feature a 650-square-foot garden Shufelt will plant and four beehives on the roof for fresh honey. The restaurant will have 76 seats and will serve morning coffee, pastries, lunch and dinner.
