René Redzepi to Open New Eatery

COPENHAGEN — Chef René Redzepi of Noma, which was named The World’s Best Restaurant in 2014, is opening a second outpost in Copenhagen.

The eatery, dubbed 108, will be helmed by chef Kristian Baumann, GM Thomas Østergaard Bagge and restaurant manager Jacob Møller. “For many years I have dreamt of opening a restaurant. Fortunately René has also been looking for the right opportunity to expand the family. Now, in partnership with him and the Noma team, this dream becomes a reality. Our restaurant’s name, 108, refers to its permanent address on Strandgade in Christianshavn, and we will open our doors there in late spring,” Baumann wrote on Noma’s website.

Sporting a more casual feel than its multi-course dining counterpart, 108 will be a place for families to come together for a quick bite. Chef Baumann said the team has spent the past six months collaborating with various farmers, as well as pickling, salting and preserving berries, plants and flowers.

In the meantime, the 108 team plans to take over Noma for 13 weeks beginning mid-January while Redzepi and his team are in Australia working at Noma’s pop-up restaurant in Sydney. During that time, the 108 chef will be offering diners a taste of what’s to come.
