Renowned Quebec Chefs Put Berries Forward on Fall Menus

MONTREAL— Quebec’s strawberry and raspberry producers are launching a new event, La Prolongation, to celebrate the fall harvest of local berries.

Sixty renowned chefs from Quebec will put berries in the spotlight on their menus. Some berry-inspired recipes include fall strawberry soup with white chocolate quenelle from Jean-François Méthot of Le Coureur des Bois in Beloeil and Magdalen Island scallops and Quebec strawberry salsa with yuzu and Espelette pepper from Sébastien Houle, of Seb L’artisan Culinaire in Mont-Tremblant. Other chefs participating in La Prolongation include Laurent Godbout (Chez L’épicier), Guillaume Cantin (Les 400 Coups) and Patrice Demers (Patrice Pâtissier).

La Prolongation runs until October 5th. Participating chefs will also share their recipes on laprolongation.com.
