Carl Champagne and his partners, from catering company and food truck Pas d’Cochon Dans Mon Salon, have set up shop in Outremont. Chef Jean-Sébastien Thomas brings his flair for Quebec gastronomy to the menu, which highlights veggies and fish. Small plates include trout gravlax with dill and fennel ($6), and marinated oyster mushrooms ($6), while mains include cod with eggplant and cherry tomatoes ($20) and char with leeks ($18). Independent designer Tom Lariviere sourced local red maple and pine to warm up the sparsely decorated interior, which seats 60 indoors and another 60 on the terrace.
