Loka Snacks has completed its evolution from a popular pop-up to a bricks-and-mortar restaurant. The 32-seat Loka became a reality with the help of more than $40,000 raised through Kickstarter. Chef Dave Mottershall creates Canadian ingredient-driven dishes with a nose-to-tail attitude. The rotating menu of small plates has featured items such as potato mussel chowder with sour cream biscuits ($16); duck breast prosciutto with quail egg and Saskatoon berries ($17); pig head croquette with arugula mustard and rhubarb preserve ($16) and a salted chocolate cake with goat yogurt and whey caramel ($10). Guests can also choose to eat the evening’s entire menu (usually about 10 dishes) for $100. Loka also offers reservations at its chef’s table — a two-seater bar facing the restaurant’s open kitchen — where diners can enjoy a $100 per-person tasting menu while getting a close-up view of the action.
