Restaurant Buzz: Nightingale

Chef David Hawksworth is set to introduce his newest restaurant, Nightingale, to the Vancouver dining scene later this spring. The 7,400 sq-ft restaurant will highlight local ingredients in globally inspired dishes. The restaurant sports a rustic-chic look with exposed copper pipes, remodeled library furniture and a colour palette featuring hunter green, faded rust and muted oxblood tones. Nightingale’s menu includes fresh vegetables, seasonal salads and creative proteins, including a 24-oz dry-aged Alberta prime beef strip-loin ($129). “We’ve been having a lot of fun planning the menus at Nightingale,” says Hawksworth. “Our modern Canadian cuisine delivers options catered to the way people want to eat today. There are choices of shared plates, house-made pastas, creative wood-fired pizzas, salad and seasonal vegetable dishes; as well as accompaniments such as charcuterie and crudo.” The drink menu highlights classic cocktails, as well as local craft-beers and a wine program designed to complement the cuisine.
