Canadian-themed brasserie Rockwood — a new venture by Thomas Vernis and the Tomahawk Group — opened on Canada Day in Old Montreal. This 120-seat restaurant’s culinary team is led by chef Adam Aspelund, whose focus is on sourcing seasonal ingredients, meats and fish from Quebec and across Canada. The culinary team is supported by Luis Salgado, who manages the wine list, and Hugo Dallaire, who mixes drinks behind the bar. Rockwood’s menu includes grilled local halloumi cheese on vine tomatoes ($12); Canadian salmon tartar with mint pesto, fresh almonds and salmon caviar ($22); and Quebec lake trout with radish, green peas and grilled leeks ($24).
