Rosalinda, a vegan Mexican restaurant, will open its doors in Toronto’s Financial District this spring. The 136-seat restaurant is spearheaded by Max Rimaldi, Jamie Cook — partners at Pizzeria Libretto — and Grant van Gameren.
Rosalinda’s menu will focus on Mexican and Baja flavours, developed in conjunction with executive chefs Kate Chomyshyn and Julio Guajardo — the culinary team behind Quetzal, a Mexican restaurant set to open in early 2018.
Featured dishes include jackfruit pibil, Tijuana-style broccoli, spicy carrots in mole and Japanese eggplant marinated in salsa macha.
Along with a cocktail menu, mixologist Owen Walker has created a menu of low-alcohol drinks.
